Homemade Caramel Corn

I wanted to share with you one of my most beloved fall recipes.. I would go stay with my aunt and uncle on weekends and this is a family recipe she taught me. I don't feel like its fall until I have made a batch of caramel corn! My daughter is now learning to make this with me! I just love family recipes that are passed down like this! 
So here is the recipe!


Caramel Corn

1 c butter

2 c brown sugar

1/2 c light corn syrup
1 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
5 qts. popcorn (or five lg. bags of microwave)


 I always pour my popcorn in a strainer and then shake till all the seeds go to the bottom. This will save you a visit to the dentist!

Stir in the first four ingredients in a pot on medium heat.

 Bring to a boil for 5 minutes.

 Once it has done a rolling boil for 5 minutes set pot aside and stir in baking soda and vanilla.

 Pour over popcorn and bake on 250 degrees for 45 minutes.


 Stir every 15 minutes till done.

 Cool on parchment paper and then break apart.
