Easy Microwave Potato Salad


I just love when you come across a super easy recipe that tastes like you have worked over the stove for hours! This potato salad is just that kind of recipe! I have made this recipe for years and it is a family favorite!


 
 
 
Here is the recipe:
 5 medium to large red potatoes
 4 oz.  Philadelphia chive and onion cream cheese
 4 Tbs. milk
 1/2 cup water
1/2 tsp. salt and pepper

 
 
Quarter the potatoes with the skin on them.
Add the water, salt, pepper and cover with a lid.  Cook in the microwave on high for 20 minutes.


 
Next, drain the water and add the milk, the chive and the onion cream cheese. This will melt right in as you mix it up.



  
You can serve it warm  or you can let it cool and refrigerate. We have had this recipe both ways and love it either way!
I told you this was super easy!

  2. That sounds delicious! What a great idea with the cream cheese. That stuff is so versatile. I have used it in the slow cooker with chicken for a creamy sauce. Thanks for the recipe. :)

  17. OK, yesterday was grocery shopping day, and I picked up the ingredients for your potato salad. I just made it (yes, I cook at 7 a.m.!) and had to report to you that this is A.M.A.Z.I.N.G.!!! Just a little emphasis there to convince other readers. ;-) HH loves potato salad but not mine (my mother's way is all I knew). Every time we eat out and he orders one he likes, he tells me "this is how you make potato salad." I always tasted it, but I couldn't figure out what was in it. OK, Darlin' I have to tell you, this is IT!!!! Thank you, thank you, thank you for sharing this wonderful "restaurants serve it everywhere" recipe! Also, my husband thanks you. Wholeheartedly. :-)
