I have the hardest time when I pass by the fresh blackberries while shopping at Costco! These are one of my favorite fruits to make a cobbler with. I always think of my Nana when I make a blackberry cobbler. When I was a little girl, I would stay with her during summer break, and we would make cobblers from all the blackberries that grew wild around her garden!
I use her family's recipe that has been in our family for years. The only secret to this recipe is that it is made with love! I recently added a step to my Nana's recipe and it makes this cobbler perfect!
Blackberry batter recipe;
1 cup of milk
1 cup of self rising flour
1 tsp of vanilla
1 stick of butter
1 cup of sugar
3/4 cup of sugar
2 c Blackberries
2 Tbsp water
First, melt your butter and pour it in a 9x13 pan. Then mix milk, vanilla, sugar, and flour, until there are no lumps! Here is the new step I added to her recipe..
I take two cups of blackberries and add them to a saucepan, and cook them on medium heat with 3/4 cup of sugar and 2 Tbsp of water. When the mixture comes to a boil, add in 2 Tbsp of cornstarch to thicken. This gives the cobbler a pie filling effect..
Next, I add the batter mixture to the pan with the melted butter, and finally add the fruit filling! Bake on 350 for 45 minutes or until golden brown. I add a scoop of vanilla ice cream to mine!
